preparation:
- preheat oven to 450°F
- Line cookie sheet pan with aluminum foil
- Cut the (sweet) potatoes into wedges (1/2-1 inch)
- Line cut wedges, skin side down on pan.
- Drizzle with olive oil.
- Sprinkle with salt and pepper
- Roast for 35-40 minutes, until tender and brown
