recipe: Morning Glory Muffins

Ingredients:
2 cups total of:  
—- grated apple & carrots
—- canned crushed pineapple
=> drained well of all liquids

1 1/3 cups all purpose flour
3/4 cup brown sugar
1/2 tbsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

1/2 cup flaked coconut
1/2 cup dried apricots/cherries/dates “cubed” (~1/4″ cubes)
1/2 cup pecans/walnuts bits

2 eggs
1/3 cup vegetable oil
1/2 tsp vanilla 

Instructions:

  1. preheat the oven to 375ºF.
  2. line 12 muffin tin with paper liner
  3. mix flour, sugar, cinnamon, baking soda, baking powder & salt in a large bowl.
  4. Mix the eggs, oil and vanilla in a small bowl, and add to larger bowl. Mix only until combined
  5. fold in the  apple+carrots+pineapple (squeezed/drained of liquids), coconut, dried fruits and pecan. Mix in until all is combined.
  6. Divide mixture into the muffin tin, and bake for 25 minutes.
